COOKING WITH CLORIS--PIECE DE RESISTANCE CHOCOLATE ICE CREAM

First, let’s get one thing straight -- ALL of Cloris’s desserts are to-die-for delicious. However, when it comes to chocolate ice cream, Cloris has come up with a recipe that is the piece de resistance of chocolate ice creams. -- AP

PIECE DE RESISTANCE CHOCOLATE ICE CREAM

Ingredients:
2 C. heavy cream
2 C. whole milk
1/2 C. cocoa powder
2 egg yolks
1/2 C. sugar
1 T. vanilla extract
1 T. almond extract
3 oz. chocolate pudding
1/4 cup chocolate fudge sauce
1/4 cup chocolate cake icing
1/2 cup chopped fudge brownie
1/2 cup milk chocolate chips

Stir cream, milk and cocoa in medium saucepan over medium heat until mixture almost boils. Reduce heat to low. Beat egg yolks, sugar, vanilla extract and almond extract until light yellow and smooth. Beat in 1/4 cup cream/milk/cocoa mixture. Slowly stir egg yolk mixture into remaining milk/cream/cocoa mixture. Cook over low heat until mixture thickens. Fold in pudding, fudge sauce and cake icing. Cool completely. Transfer mixture to ice cream maker. Freeze following manufacturer’s instructions. Five minutes before end of freezing cycle, add chopped brownies and chocolate chips. Serve soft or transfer ice cream to airtight container and place in freezer until firm.

I gained five pounds just reading the recipe. Thank God I don't have an ice cream maker, I'd die of chocolate poisoning.

Just this past weekend, I had the most delicious homemade vanilla ice cream that a friend of mine made. But I have to agree with AP -- chocolate is best!! I'm going to hunt down an ice cream maker and try out this recipe. I'm not sure which part my kids will enjoy more, making it or eating it! I'll let you know...

Cloris has one of those enviable metabolisms where she can eat anything and never gain an ounce. Don't you just hate her? I'd suggest making this ice cream when you have a houseful of company. That way everyone only gets a small amount, and the calories are spread over a vast number of people.

Anastasia, your friend Cloris' homemade chocolate ice cream recipe really was to die for! I tracked down an ice cream machine and hit the grocery store with my 6 and 8 year old in tow. I had only to whisper the words, "homemade ice cream" and they shot through the door like Sidney's Candy and Super Saver, the front runners from this year's Kentucky Derby. Several hours and two sticky kids later, we gorged on the utterly sublime, outrageously decadent, not-to-be-missed treat. Can't wait to see what Cloris' next recipe will be!!

p.s. my husband said it's the best ice cream he's ever had. I think it's the almond extract. It made all the difference.
