COOKING WITH CLORIS--MANGO GUACAMOLE

For those of you like me, who love avocados but aren’t crazy about picante sauce and salsa or anything on the spicy side, Cloris has come up with what I think is the best guacamole ever. -- AP

MANGO GUACAMOLE

Ingredients:
three small or two large ripe avocados, peeled and pitted
1 clove garlic, minced
juice of 2 limes
1 lg. mango, peeled and seeded or 2 cups frozen mango, defrosted
1 ripe tomato, seeded and chopped

Mash avocados with lime juice. Set aside. In food processor combine garlic, tomato, and mango. Process until tomato and mango are chopped into small bits. Fold into avocado/lime mixture. Serve chilled or at room temperature with tortilla chips or use as a sandwich spread with chicken or turkey.

I love guacamole and bet it tastes great with mango, but unfortunately you need chips to scoop it up and I don't need to eat any chips.
