SLOW-COOKED CHICKEN BREASTS WITH MANGOES AND CRANBERRIES

As you all know, with my hectic schedule I love dinners that cook themselves. Today Cloris shares another one of her make-ahead-in minutes dinners.

SLOW-COOKED CHICKEN BREASTS WITH MANGOES AND CRANBERRIES
 (serves 4)

Ingredients:
4 skinless, boneless chicken breasts
3 oz. dried mangoes
1/2 cup dried cranberries
4 large carrots, peeled
1/4 cup barbecue sauce
3/4 cup chicken broth

Place chicken breasts, dried mangoes, cranberries, and carrots in a slow cooker. Mix together barbecue sauce and chicken broth. Pour over chicken, fruit, and carrots. Cook on low 6-8 hrs.

You can literally prepare this dinner in less than 5 minutes before going to work. Serve with cous cous, minute brown rice, or bowtie noodles and you’ve got dinner. Readers, what’s for dinner at your house tonight?

Just printed this recipe out for my daughter who does most of her cooking in the crock pot. I might even try this myself. I just have to talk my husband into eating mangoes.
