COOKING WITH CLORIS - GUILT-FREE SPINACH DIP

We all do lots of entertaining over the summer months, and often that means fat and calorie laden dips with chips. We assuage our guilt by chopping up veggies to dip along with the chips, knowing it’s really not going to counter all those dip calories. Today Cloris offers a recipe for guilt-free spinach dip. And believe me, you won’t miss the a single calorie or gram of fat. -- AP

GUILT-FREE SPINACH DIP
Makes 2 cups

Ingredients
1 10-oz. package of frozen chopped spinach, thawed and drained
1/2 cup low-fat sour cream
1/2 plain low-fat yogurt
1/4 cup chopped green onions
1-1/2 teaspoons lemon juice
1/2 teaspoon dried dill

Combine all ingredients. Cover and chill at least 2 hours. Serve with crudités, crackers, pita chips, and/or a thinly sliced baguette.

Sounds yummy, doesn't it? Who's going to whip up a batch this week? Post a comment for a chance to win books from our Book Club Friday guest author this week. -- AP
