COOKING WITH CLORIS--HAM AND CHEESE FRITTATA


One of the great things about a holiday ham is the leftovers. I freeze dinner-size portions, then use them for a variety of meals throughout the winter. This Ham and Cheese Frittata makes for a great dinner on a cold, wintry night.

Ham and Cheese Frittata

Ingredients:
1 tablespoon olive oil
1 medium onion, finely chopped
2 cups fresh baby spinach
1 cup diced tomatoes
1-1/2 cups cooked ham, diced
6 eggs
1 cup shredded mozzarella
1/3 cup grated Parmesan

1. In skillet cook onion in olive oil. When onion is golden brown, add spinach, tomatoes, and ham. Continue cooking until spinach wilts and ham is cooked through.

2. Pour vegetable/ham mixture into shallow 2-qt. baking dish coated with cooking spray.

3. In a bowl whisk eggs. Add mozzarella. Pour over vegetables/ham. Sprinkle Parmesan cheese over top.

4. Bake at 350 degrees for 30 minutes or until eggs are set and cheese melted.
