So when they go on sale for pennies per pound, I'd pick up several and keep them for a later date.(My hubby was thrilled with that Thanksgiving Day meal any time of the year!) <br /><br />But it makes a stronger tasting stock and doesn't do well as an interchangeable base for soups requiring a chicken stock base. So I kept it simple and made turkey noodle with it or turkey potpie if I had plenty of leftover meat. E.
