COOKING WITH CLORIS--REAL MEN WILL EAT THIS QUICHE

If you’re a woman of a “certain age” you’re familiar with the phrase, “Real men don’t eat quiche.”  Those real men never tasted the quiche Cloris shares with us today.  Trust me.  ALL men, whether nerd or alpha male, will clamor for seconds and even thirds of this baby.  My teenage boys can each scarf down an entire pie in one sitting.  Good thing they burn up calories the way they do.  Their mother, on the other hand, has to settle for a thin slice along with a huge salad.  Oh, to have the metabolism of the average teenage boy…-- AP

CLORIS’S REAL MAN QUICHE
(serves 4)

Ingredients:
9” deep dish frozen pie crust
5 eggs
1 cup half and half
1 tsp. garlic powder
 2 oz. cream cheese, softened
3/4 cup chopped zucchini
1/4 cup cooked bacon, broken up into tiny pieces
1/4 cup shredded mozzarella cheese
1/4 cup shredded parmesan cheese

Directions:
Preheat oven to 400 degrees.  Beat eggs, slowly pouring in half and half, then garlic powder.  Mix together zucchini, bacon, and cream cheese.  Place mixture in frozen pie shell, covering bottom of pie shell evenly.  Pour egg mixture on top.  Sprinkle with mozzarella  and parmesan cheeses.  Bake 10 minutes.  Reduce heat to 350 degrees and bak and additional 30 minutes or until knife inserted in center comes out clean.
Cloris’s hot summer tip

  1. Oooo, this sounds good! But since I don't have that teenage metabolism (more like meno-pause the weight loss-tabolism...how many calories would a slice be?

  2. Cloris doesn't believe in counting calories. Her philosophy is that you can eat anything you want in moderation. Then again, Cloris is a size 2! This quiche is so satisfying that you can cut yourself a thin sliver, eat it with a large salad, and not worry. A little goes a long way.

  3. My hubby going is through chemo and calories are his friends right. This sounds like something he would actually enjoy. He doesn't know how it tastes, so he won't be comparing it to something else.
    thanks for sharing Cloris!

  5. Pie crust, eggs and cheese, zucchini and bacon. You've got the four basic food groups there. Sounds like the perfect meal.

  6. This sounds like a "make ahead" for holiday weekends. Thanks. This is a lot simpler than other recipes I have read. Could you substute other vegies for the zucchini?

  7. Janet, I checked with Cloris, and she said you can substitute just about any veggie you'd like. She suggested chopped broccoli, spinach, tomatoes, and yellow squash as alternatives. Or combine several veggies. She said if you're going to use canned or frozen veggies, make sure they're drained well first.

  9. Hi Cloris and Anastasia -

This sounds like another keeper. Did anyone tell Cloris her first recipe hit the calorie jackpot? I mean it had so little, I had two helpings.

The hub liked it too - YUM

I can calorie this out on the website I use but I'd rather not. It sounds too good to worry about that.

And tell Cloris, all sizes are beautiful

  10. Hi Kathye--
Yes, Cloris heard about how few calories there were in her first recipe. That's why you can eat the quiche and not worry. It all balances out in the end. And you're so right about size. It's what's inside that counts.

  11. Every Christmas when my son and his family come over for our Christmas Brunch, I make a quiche for them with basically the same ingredients Cloris uses except minus the garlic but I also had diced ham along with the bacon to really make it a "guy" quiche. I never have any leftovers. My son has 16 yrs in the Army and served 2 stints in Iraq.

  12. I can't do any crafts--it is hard to read and do crafts so I never learned but my daughter is very crafty.
