CARROT, SQUASH, AND SWEET POTATO SOUP

Ingredients:
1 lbs. carrot, cut into large pieces
3/4 lb. sweet potatoes, peeled and cut into large chunks

1 med. onion, quartered
3 cups low-sodium chicken broth
2 cups water
1 teaspoon salt
1 tablespoon honey
1 bay leaf

  1. I like carrot soup, butternut squash soup and sweet potatoe soup separately so I'd probably like them all together. Will definitely be printing out this recipe.

  2. Yummy! Even tho we seem to be in the middle of spring and zooming towards another hot and dry summer, I still love soups, chowders and stews - no matter what the temps are outside. This is definitely a keeper!

  3. It's supposed to snow and rain tomorrow here in NJ. Might be a good day for soup.
