COOKING WITH CLORIS -- SPAGHETTI SQUASH

Several years ago Cloris introduced me to spaghetti squash, and I’ve been a devotee ever since. Spaghetti squash takes a long time to cook in the oven, though. It’s not a dish you can whip up quickly after arriving home from work. Or can you? Read on to learn how Cloris cuts her cooking time from an hour to fifteen minutes. -- AP

MICROWAVED SPAGHETTI SQUASH

1. Cut squash in half lengthwise.

2. Scoop out seeds seeds.

3. Place cut sides down in microwave safe dish.

4. Add about a half inch of water to dish.

5. Cover with plastic wrap.

6. Microwave on high for 15-20 minutes, depending on size of squash.

7. Using a fork, shred into strands.

8. Toss with butter and parmesan cheese, spaghetti sauce, or brown gravy.

  3. I love butternut squash & cook it like this in the microwave. I've always wanted to try spaghetti squash, but wasn't sure how to prepare it. I wonder if you could substitute it for traditional spaghetti & put spaghetti sauce on it?

  4. I have always liked squash but have never tried the spaghetti squash. It sounds good. Traditional spaghetti sauce would be tasty but I think it would especially good with just a bit of butter, a little garlic and some parmesan cheese. Yummy!

  5. Barbara, you can absolutely substitute spaghetti squash for spaghetti. It's a much healthier, less fattening alternative. And as Jane suggests, it's also quite good with butter, garlic and Parmesan cheese.
