MOCK FRENCH FRIES
(serves 4)

Ingredients:
8 carrots
3 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon salt
Peel carrots and cut into
long thin slices.
Whisk together olive oil,
garlic powder, and salt. Pour into large Ziploc bag.
Add carrots to bag. Close
bag and shake to coat carrots.
Place carrots on a baking
sheet. Bake at 425 degrees for 20 minutes or until carrots turn golden brown.

I don't know about replacing french fries, but this recipe sounds like a great new way to serve carrots.
