COOKING WITH CLORIS--BLT SALAD

Who doesn’t love a good BLT sandwich? Especially this time of year when tomatoes are at their succulent best. But BLT’s are not very good for us. Lots of fat from the bacon and mayo, not to mention the nitrates in the bacon. Still, they are delicious and hard to resist. The next time you have a craving for a BLT, try a BLT salad, instead—one made with naturally cured turkey bacon—and a few other surprises. Trust me, you won’t be disappointed, and you’ll satisfy your BLT craving in a healthful way.

Good for You BLT Salad
(serves 4)

Ingredients:
1/2 lb. turkey bacon
olive oil
head of romaine lettuce
two ripe tomatoes
1 large avocado
3 oz. crumbled goat cheese
dressing of your choice

Cut turkey bacon into 1” pieces. Cook in a little bit of olive oil. Drain on paper towels to remove excess oil.

Shred the lettuce and place in large bowl. Cut the tomatoes and avocado into bite-sized pieces. Add to bowl. Add bacon and goat cheese. Drizzle with a little dressing (Don’t drown; you don’t need much.) Toss.
