#COOKING WITH CLORIS--GUEST AUTHOR KATHRYN LIVELY COOKS #GNOCCHI

In my contemporary romance, Finish What You Started, actress-turned-showrunner Gabby reconnects with her ex-husband Dash. Dash’s acting career hovers around the D-list, and he hopes to get back to star status. Along the way, there’s food to enjoy but I don’t dwell too much on the eats as I have in other works. Dash and Gabby have takeout from his favorite Italian place, there are scenes at the craft table during a shoot, and a tense confrontation at a popular Jewish deli. Food isn’t much of a star in this story, but rest assured people will eat well in the follow-up book.

I tend to showcase Italian food in many of my works by virtue of heritage. My mother is a second-generation American in her family, with grandparents from Sicily. Sundays were reserved for sit-down dinners of pasta and meatballs, or ziti with fried zucchini. Special occasions called for lasagna and sausage and peppers. Over time, I’ve managed to cooks all these dishes with good results. One of my favorite meals, gnocchi, my mother never tried for some reason. I’m not sure why—having made a lasagna, the work involved doesn’t seem excessive.

My characters enjoy a variety of bites in my first book, Totally Bound. Do they have gnocchi? You’ll have to read to find out. I know I plan on it in the future. What’s more, I’ve devised a “cheater” recipe in case you don’t have the time to boil and mash potatoes beforehand. If you have leftover mashed potatoes from the grocery deli, or if you buy the premade stuff, it can work.

I take about a cup of cold mashed potatoes (they have to be cold, you’ll see why) and mix in one egg with enough flour to create a dough-dumpling consistency. If the potatoes are warm, wait, otherwise you’ll end up creating cooked egg in potatoes. Yuck.

As for measuring flour, I start with a quarter cup and keep adding until I get the dough. You don’t want potatoes coming off on your fingers as you knead.

Once the dough ready, separate it and roll long ropes to about the width of a fingertip. Cut one inch pieces and press the tines of a fork down on each to create that ridged appearance. Or don’t – it doesn’t affect the flavor.

Boil a pot of water, and add the gnocchi. The dumplings will be ready when they float to the surface, and you just skim them out of the water into a bowl. Add your favorite sauce, brown some ground sausage or add ham or meatballs, and grate some cheese. Time to eat!

Just thinking about gnocchi has me ready to make some dough for dinner. Don’t be surprised if my characters eat it in every book I write from now on. ;)

COOKING WITH CLORIS--GUILT-FREE LASAGNA


Who doesn’t love lasagna? But don’t you feel guilty afterwards? All those calories! All that fat! Well, food editor Cloris McWerther has come to the rescue of lasagna lovers everywhere with her Guilt-Free Lasagna recipe. She uses chicken sausage, zucchini, fat-free ricotta, and part-skim mozzarella. All the taste, none of the guilt! Manga! -- AP

GUILT-FREE LASAGNA
Ingredients
12 oz. package spinach/cheese chicken sausage, chopped
3/4 cup of chopped onions
2 cloves of garlic, chopped
2 cups diced zucchini
2 tablespoons olive oil
25 oz. jar 3 cheese pasta sauce
1 tablespoon Italian seasoning
3 cups of fat-free ricotta cheese.
1/2 teaspoon fresh grated nutmeg
1 egg
2-1/2 cups shredded part-skim mozzarella cheese
1-1/4 cups grated Parmesan cheese
12 whole wheat lasagna noodles

Soak lasagna noodles in hot tap water for 15 minutes. While noodles are soaking, brown sausage, onions, garlic, zucchini, and Italian seasoning in olive oil.

Whisk egg in mixing bowl. Blend in ricotta cheese and nutmeg.

Spread 1/2 cup of pasta sauce on the bottom of a 9” x 13” lasagna pan. Add remaining sauce to the sausage mixture.

Remove the lasagna noodles from water. Shake off excess water from noodles. Lay 6 noodles in pan over sauce layer. Spread half the ricotta cheese mixture over the noodles. Spread 1 cup of the mozzarella cheese over the ricotta layer. Sprinkle 1/2 cup of the Parmesan cheese over the mozzarella layer. Spread half the meat sauce over the cheese layer. Add remaining layer of noodles. Spread the remaining ricotta mixture over the noodles. Spread 1 cup of the mozzarella, then 1/2 cup of the Parmesan cheese over the ricotta. Spread the last layer of meat sauce on the cheeses. Sprinkle the remaining mozzarella and Parmesan cheeses on top.

Cover the pan with foil. Bake in preheated oven at 350 for 25 minutes. Remove foil and continue baking uncovered for another 25 minutes. Remove from oven and allow to cool for approximately 15 minutes before serving.

COOKING WITH CLORIS--EGG FOO ZUCCHINI ITALIANO

Cloris is back today with another great zucchini recipe, egg foo yung Italian style. -- AP



EGG FOO ZUCCHINI ITALIANO
serves 4

Ingredients:
4 medium zucchini, coarsely grated
1 onion, grated
3 eggs, beaten
1/4 cup whole wheat flour
1 clove garlic, minced
olive oil
2 cups tomato sauce, heated
parmesan cheese

Mix zucchini, onion, eggs, flour and garlic together. Heat oil in skillet until hot. Use a tablespoon sized cookie dough scoop to add zucchini mixture to oil. Fry until golden brown, turning once. Drain on paper towels to remove excess oil. Divide zucchini onto 4 plates. Top with heated tomato sauce. Sprinkle with parmesan cheese.
