Cherry
Muffins
(makes 12 muffins)
Ingredients:
3 T. butter
2 T. cream cheese, softened
1 cup all fruit cherry spread
1 T. lemon curd
1/2 cup sugar
1 teaspoon baking soda
pinch of salt
1 egg
1 teaspoon almond extract
1-1/2 cups all-purpose flour
Melt butter in microwave. Allow to cool. Whisk together cherry spread, lemon
curd, and melted butter. Mix in cream cheese.
Mix together sugar, baking soda, and salt. Whisk into
cherry mixture.
Whisk together egg and almond extract. Mix into
batter. Mix in flour.
Scoop into paper-lined muffin tin. Back 25-30 minutes
or until toothpick inserted in center of muffin comes out clean. Allow to cool
on wire rack.
