COOKING WITH CLORIS -- CARROT, SQUASH, AND SWEET POTATO SOUP


A hearty bowl of soup makes for a perfect meal in winter. Why not try this Carrot, Squash, and Sweet potato Soup from Cloris? It’s a snap with a slow cooker. -- AP

CARROT, SQUASH, AND SWEET POTATO SOUP

Ingredients:
1 lbs. carrot, cut into large pieces
3/4 lb. sweet potatoes, peeled and cut into large chunks
3/4 lb. butternut squash, peeled and cut into large chunks
1 med. onion, quartered
3 cups low-sodium chicken broth
2 cups water
1 teaspoon salt
1 tablespoon honey
1 bay leaf
croutons and grated parmesan cheese

Place all ingredients in crock-pot. Cover and cook on low 8 hrs. Remove bay leaf and puree soup. Ladle into bowls. Top with croutons and cheese.

I like carrot soup, butternut squash soup and sweet potatoe soup separately so I'd probably like them all together. Will definitely be printing out this recipe.

Yummy! Even tho we seem to be in the middle of spring and zooming towards another hot and dry summer, I still love soups, chowders and stews - no matter what the temps are outside. This is definitely a keeper!
