COOKING WITH CLORIS -- GREAT GRAPE RICE


I love grapes. I eat them like candy and toss them into salads. Today Cloris has a recipe for a side dish with grapes. -- AP

GREAT GRAPE RICE

Ingredients:
3-1/2 cups cooked brown rice
1/2 cup chopped scallions
1 cup seedless red grapes, halved
1/2 cup chopped walnuts
1 tablespoon all fruit apricot jam
2 tablespoons olive oil
1/2 cup red wine vinegar

Combine the rice, scallions, grapes, and walnuts. Mix together the jam, olive oil, and vinegar. Add to the rice mixture and toss to combine.

This is an interesting recipe. At first glance it didn't seem very appealing to me. But, as I re-read it, I think I'll give it a try. It not only sounds healthy, it will also be very colorful. Thanks!
